Broccoli Craisin Salad

 

This is one of my family’s favorite side dishes. It is so easy, and everyone in my family loves it. Broccoli is my kids’ favorite vegetable, so I am always looking for new ways to serve it.*

 

 

Ingredients:

2 large heads organic broccoli
1 medium sized organic apple
3/4 cup craisins
1/2 cup sliced raw or roasted almonds
1 TB finely minced onion

For the dressing:

1 1/2 cups mayonaisse
4 TB organic rice vinegar, or more to taste
1 TB xylitol, or more to tasteĀ 

Wash broccoli and trim off ends. Cut the broccoli into bite sized bits, and put in a big mixing bowl. Chop the apple into bite sized pieces and add to broccoli, then add craisins, almonds, and onion. In a separate bowl, whisk together the mayo, vinegar, and xylitol. I mixed the dressing up the night before we were going to eat the salad, so that the xylitol would dissolve well. If you don’t have time to do this, just let it sit for 20 minutes or so to give the xylitol a bit of time to dissolve. Once it is dissolved, pour over the broccoli mixture and stir to combine. And that’s it! So easy and simple, and again, a great way to use up broccoli (especially if your bountiful basket was full of it again)!
