I love my crock-pot. Like, REALLY love it. There is nothing easier than dumping things in it & hitting a button. I haven’t met a crock-pot recipe that I didn’t like. This one is one of my favorites because it combines 3 very important things: great taste, healthy, & budget friendly. Not to mention easy. This is actually a Weight-Watchers recipe that I have taken from & added to somewhat.
You will need:
1 lb. extra lean ground beef or turkey meat
1 onion, chopped
2 cloves garlic, minced
1 packet taco seasoning
1 packet Hidden Valley Ranch mix
3 c. water
2 28-oz. cans diced tomatoes (I use Rotel)
1 15-oz. can tomato sauce
2 15-oz. cans kidney beans, rinsed and drained
2 cans corn
To start, brown your ground meat, or in our case, turkey meat, with the onion & cloves of garlic.
After everything is cooked together, drain if needed. Pour into crockpot. Drain the kidney beans in a colander. This is the easiest way to make sure they are completely rinsed.
After the kidney beans are rinsed & drained, just open the cans & dump everything into the crock-pot. This is a good “clean out your pantry” soup. Most of the cans I usually always have on hand, so it only costs a few bucks to make this soup.
Give it all a good stir. That’s all of the prep work that needs to be done. I set my crock-pot on low for 8 hrs. I think the longer this soup simmers, the better it tastes. If you are in a time crunch, you can set it on high for 4-5 hrs.
That’s it. Let it cook & 8 hrs. later you will have a wonderful tasting, good for you soup. It tastes awesome the next day, as well. You can top it with low-fat sour cream, a few tortilla chips, or some shredded cheddar cheese. Our family loves it. Even my 3 yr old ate it up. Perfect dinner for busy moms who want to feed their family something hearty & healthy.
