My husband and I have a major sweet tooth. Basically, we eat dessert every night (doesn’t everyone?) We had a hankering for brownies so we rummaged through the fridge and pantry. We were almost out of our regular cane sugar, so we opted to use light brown sugar. This is a simple recipe that you can throw together in a few minutes and the best part? No more pre-packaged brownie mix!
Ingredients (recipe yields one 9×9 pan)
- 1/2 cup melted butter
- 1 cup light brown sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 1/2 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
Preheat oven to 350°
Mix together the butter, sugar, and vanilla. Beat in eggs. Combine flour, cocoa, baking powder, and salt; gradually stir into the egg mixture until well blended.
Spread the batter evenly into the greased pan.
Bake for 20 minutes.
Let cool before cutting into squares.
Enjoy with vanilla ice cream!
