Vegan Quinoa Breakfast Bars

Quinoa Breakfast Bars
(adapted from this recipe)

3 cups rolled oats
6 tablespoons coconut oil
1 cup cooked quinoa
1/2 cup ground flaxseed
4 tablespoons chia seeds
1 teaspoon ground cinnamon
1 teaspoon salt
1 cup roasted almonds
1 cup honey
2/3 cup organic peanut butter
a handful of carob or vegan dark chocolate chips (optional)

Preheat your oven to 325 degrees. Line a baking sheet with foil and spray with cooking spray to coat. I like to use coconut oil cooking spray.

Melt coconut oil in a skillet or medium saucepan and add the rolled oats. Heat over medium heat until golden brown and toasted, stirring frequently. Put the oats in a mixing bowl with the quinoa, flaxseed, chia, cinnamon, salt, and almonds and stir to combine.

Put the honey and peanut butter into a medium sized saucepan and bring to a boil, stirring frequently. Once it has come to a boil, pour over the quinoa mixture and stir with a spatula until fully combined. Next spread the mixture out onto the prepared baking sheet, patting into place with the spatula. If using the chocolate chips, sprinkle over the top evenly and pat so they sink into the bars.

Bake 17-22 minutes, until golden brown, and remove to cool before cutting.

Now try to keep yourself from eating the entire pan! These are so good, and so full of nutrients and protein, that they are a perfect start to your day. Enjoy!

    What can you substitute for chia seeds? Any suggestions?

      Probably any dry ingredient. Maybe crispy puffed rice, coconut or sunflower seeds?

    These really look yummy. I was disappointed to see honey used in your “vegan quinoa breakfast bars”.
