Bacon Waffles

When we were in Vegas for MommyCon we had a pre-Con breakfast meeting and Xza chose an amazing place. Right next door to our host hotel is the Quad (formally the Imperial Palace) and in there lives the restaurant Hash House a Go-Go. Now if you are ever  in Vegas please do yourself a favor and GO THERE! They do have a few locations sprinkled down the strip plus one in Chicago, Connecticut, and Reno (If you live there… GO!) They have really good food, good service, huge portions and great prices. We had a very large group complete with two tables. Our table decided to order four different things and share. I personally loved this because the menu was full of so much yumminess I was very overwhelmed when trying to decide what to order. Xza, Kelli, Jessica and I decided to order the following:

French Toast- It was very yummy and even had a grilled banana. It came with 4 huge pieces so perfect for sharing

Sage Fried Chicken and Bacon Mashed Potatoes with a maple reduction- I cannot put into words exactly how effing amazing this is. I am still scouring the web for a copy cat recipe.

Bacon Waffle – yup! you read right BACON waffle. It is a waffle with bacon literally baked INTO it. Not chunks of bacon either, complete strips of yummy, delicious BACON!

I am sure after reading Squishy’s post about her Breakfast with Jamie you can tell that us TMD girls LOVE bacon. Once we got home I was still thinking about that Bacon Waffle. The great thing is I am married to the breakfast extraordinaire and his special skill is in the art of waffles. So we decided to try our hand at making this yummy creation all on our own. Then we thought it would be even better to share it with you. It is a really easy and quick recipe and quite frankly I am shocked I had never thought of this before. So if you are reading to have your tastebuds blown… here you go:

 

Ingredients:

Bacon

  • Cook bacon as preferred. Set aside. 

Waffles:

  • 2 eggs
  • 2 Cups Flour
  • 1 3/4 Cup Milk
  • 1/2 Cup Vegetable Oil
  • 1 Tablespoon Sugar
  • 4 Teaspoons of Baking Powder
  • 1/4 Teaspoon Salt
  • 1/2 Teaspoon Vanilla Extract

Directions

  • Heat Waffle Iron
  • Whisk eggs together
  • Add Milk and whisk
  • Add Vegetable Oil and whisk
  • Add Vanilla Extract and whisk
  • Add Sugar, Salt and Baking Powder then whisk
  • Slowly add in Flour while continuing to whisk
  • Spray iron with non-stick spray.

Now onto the magic that is creating a BACON WAFFLE:

  • Place 2-3 strips of bacon onto the waffle iron
  • Pour waffle batter over the bacon
  • Close iron
  • Bake until done
  • Slather on the butter and syrup
  • ENJOY!!!

I know this sounds so good to you right now! You don’t even have to wait for breakfast because a favorite in the De Groff house is “Breakfast for Dinner” on the nights we want something quick and easy. I served this with cheesy scrambled eggs and it was NOM.

    I definitely made these for dinner tonight and they are absolutely amazing! Definitely a keeper only my husband decided we should double the batter because it didn’t “sound” like enough, needless to say he’s going to be making waffles for the next hour than freezing them.
