I am almost done with my Whole 30, which I recently wrote about. I have felt great this month! I have more energy and feel a little more focused without grains, sugar and dairy in my diet. I am happy with the results so far, and feel that regular paleo will be even easier after the Whole 30! I thought I’d share one of our favorite easy paleo recipes, one that can be easily adapted to fit within the parameters of the Whole 30.
Bacon Wrapped Cilantro Chicken
3 boneless skinless chicken breasts
2 pounds bacon
1/2 a bunch of cilantro, chopped
3 TB Dijon mustard
4 TB Raw Honey*
1 tsp. garlic powder
1/2 tsp. onion powder
A dash of salt and pepper
Preheat your oven to 400 degree and set aside a baking dish.
Cut your chicken into strips about 1.5 inches wide. In a medium bowl mix your chopped cilantro, Dijon mustard, honey, garlic powder, onion powder, salt and pepper. Dip each slice of chicken into the marinade, coating it well, and then wrapping a strip of bacon all the way around the slice of chicken. Place in the baking dish and continue until all the chicken is in the pan. Bake for 40 minutes, flipping them over about halfway through. After the 40 minutes is up, turn your oven to broil and broil the pieces on each side until the bacon is crispy. That’s it! We served ours with a simple spinach salad and roasted beets.
*If you are doing the Whole 30, leave the honey out of the chicken marinade.
