This is an incredibly simple recipe, but has some of my favorite things in it. It’s also fantastic grilled or sautéed.
1 lb green beans, trimmed and washed
10 cippoline onions, outer layer peeled (can substitute 5 shallots)
Salt and pepper
Put onions and green beans in a shallow roasting pan or large rimmed cookie sheet. Salt, pepper, and drizzle with a few tablespoons of olive oil. Toss to coat and place in 375 degree oven for 30 minutes. Drizzle with balsamic vinegar after removing from the oven and enjoy!
